Healthy pancakes! For more variety, add: 1/4 cup applesauce; 1 1/2 tbsp diced nuts; or 1/4 cup blueberries

Recipe Ingredients for Oatmeal Pancakes

1 cup fat free milk (or water)
3/4 cup oatmeal
3/4 cup Oat Flour
4 large egg whites
1 tsp cinnamon

Recipe Directions for Oatmeal Pancakes

  1. Heat milk (or water) until hot, stir in oats and set aside

  2. Beat egg whites into a stiff foam with hand mixer or blender, then set this aside as well

  3. Mix the remaining dry ingredients together, then stir in oatmeal mixture

  4. Fold the egg whites into the mixture until it is well blended

  5. Put 1/4 cup of batter on hot, greased skillet and cook until brown on both sides
