Recipe Ingredients for Oatmeal Pancakes

1 cup oatmeal
1 cup flax seed
1/2 cup almonds, sliced
4 eggs, beaten
1 cup cottage cheese, low fat
3/4 cup soy milk
1 tbsp vanilla extract
1 tsp cinnamon, ground

Recipe Directions for Oatmeal Pancakes

  1. Using a food processor, combine all ingredients and process just until smooth. Add more soy milk if thinner batter is desired.

  2. Bake on a hot [375 degree] griddle until golden brown on both sides.
