This is a recipe from Laurel's Kitchen Recipes that has been altered to add more nutrition and lessen the fat content. I use rolled five grains (I found at Safeway in bulk foods.) Add 1 medium chopped apple for more deliciousness! With the apple the calories per pancake equals 135. Or use any fruit you like. It is best that the fruit is chopped small to prevent sticking to the pan.

Recipe Ingredients for Oatmeal pancakes

1 1/4 cup non fat milk
1 cups rolled oats
1 tablespoon oil
2 eggs
1/4 cup whole wheat flour
1/4 cup buckwheat flour
1 tablespoon brown sugar
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup wheat germ
1/2 cup chopped nuts

Recipe Directions for Oatmeal pancakes

Soak the oats in the milk for at least five minutes. Meanwhile, beat eggs and oil and blend w/soaked oats. Blend and mix in flour, sugar, baking powder, salt and wheat germ till dry ingredients are moistened. Add nuts and apples. Cook as you would any pancake. Top w/warmed fruit salad, syrup or PB and J!
