Delicious and healthy oatmeal pancakes

Recipe Ingredients for Oatmeal Pancakes

1 1/2 cups rolled oats
1 1/2 cups skim milk
1 teaspoon lemon juice
1 cup whole wheat flour
1 teaspoon sugar
1 teaspoon baking soda
1 teaspoon salt
2 eggs, beaten

Recipe Directions for Oatmeal Pancakes

  1. Preheat skillet.

  2. Combine skim milk and lemon. Set aside.

  3. Combine dry ingredients and mix well, coating oats in the flour mixture.

  4. Beat eggs well, then add milk mixture.

  5. Combine wet and dry ingredients. Add a hint of almond extract for a nutty flavor.

  6. *NOTE: When you first combine wet and dry ingredients the mixture will seem a little runny. Do not add flour! The oats will soak up some of the moisture and it will thicken.

  7. Cook with spray oil or a non-stick skillet.
