A modification of oatmeal pancakes from recipes found on cc. Eliminate the butter and syrup for an even healthier meal.

Recipe Ingredients for Oatmeal Pancakes

1/4 cup Rolled Oats
1/2 cup Cottage Cheese, Lowfat, 1% Milkfat
2 Eggs
1 tsp Vanilla
1/8 tsp Cinnamon
1/8 tsp Nutmeg
1 tbsp Country Crock Butter
1 tbsp Maple Syrup

Recipe Directions for Oatmeal Pancakes

  1. Grind oats into a powder, using a coffee grinder.

  2. Combine all ingredients, except butter and syrup, in a blender.

  3. Blend for several minutes until smooth.

  4. Heat skillet over medium heat.

  5. Spray pan with Crisco, non fat, cooking spray.

  6. Drop mixture onto hot pan to form several 3 - 4 inch pancakes.

  7. Cook as normal for pancakes, several minutes on each side.

  8. Top with butter and syrup.
