Recipe Ingredients for Oatmeal muffins for two (King Arthur)

1/3 cup oats
5 1/3 oz buttermilk
1 1/3 oz light brown sugar
3/4 oz unsalted butter
25 g egg (one half of large egg)
1/2 cup flour unbleached, all-purpose
1/4 t baking soda
1/3 t baking powder
1 dash salt
1/3 cup currants

Recipe Directions for Oatmeal muffins for two (King Arthur)

  1. Soak oats in buttermilk overnight, covered, in refrigerator.

  2. Preheat oven to 425 F. In medium bowl, combine the buttermilk and oat mixture, brown sugar, egg, baking powder, baking soda, and salt. Gently stir in the flour and currants.

  3. Scoop into 4 greased muffin cups and bake for 20 minutes, until the tops are light golden brown and inserted toothpick comes out clean.

  4. Remove from oven, let cool for 5 minutes on a rack, and then turn out of pan to finish cooling.
