Betty Crocker Oatmeal Muffin recipe

Recipe Ingredients for Oatmeal Muffins

1 cup buttermilk
1 cup oatmeal
1/3 cup butter
1/2 cup brown sugar, packed
1 egg
1 cup flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt

Recipe Directions for Oatmeal Muffins

  1. Preheat oven to 400 degrees F.

  2. Lightly grease 10 muffin cups.

  3. Combine buttermilk and dry oatmeal (rolled oats) and soak at least 1 hour or preferably overnight.

  4. Soften butter to room temperature and cream together with the brown sugar. Mix egg into butter/sugar mixture and set aside.

  5. Sift together all other dry ingredients and set aside.

  6. Mix 1/3 of the oatmeal mixture into the butter/sugar mixture. Mix 1/3 of the flour mixture into the butter/sugar mixture. Continue to alternate mixing the oatmeal and flour mixtures into the butter/sugar mixture until it is all combined.

  7. Equally divide batter into 10 muffin cups and bake for 20 minutes.
