Hearty oatmeal muffin that is great with any mix-in; chocolate chips, blueberries, strawberries, bananas and nuts, etc.

Recipe Ingredients for Oatmeal Muffins

1 cup buttermilk
1 cup regular oats
2 tbsp butter, softened
1/2 cup brown sugar
1 egg
1 tsp vanilla
1 cup flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 cup blueberries

Recipe Directions for Oatmeal Muffins

  1. Soften oats in buttermilk.

  2. Add remaining ingredients; mix well.

  3. Put in muffin cups.

  4. Bake at 400 degrees for 15-20 minutes.
