Recipe Ingredients for Oatmeal Muffins

1 1/2 cups milk
1/2 teaspoon salt
2 tablespoons melted vegetable fat or butter
1 tablespoon sugar
1 1/3 cups rolled oats
1/2 cup entire wheat or Graham flour

Recipe Directions for Oatmeal Muffins

  1. Put sugar, milk, salt, and fat into a bowl and mix well.

  2. Add rolled oats and flour.

  3. Mix to a smooth batter and set in a cold place overnight.

  4. Beat a few times with a spoon then drop the batter into hot, oiled iron gem pans and bake in a medium oven to a nice brown.

  5. NOTE: Only iron gem pans should be used for aerated breads since the expansion of the batter is caused by the contrast between the hot irons and the cold batter.
