Recipe Ingredients for Oatmeal Muffins

1 cup rolled oat (old fashioned oatmeal)
1 cup skim milk
1 cup flour
1/2 cup brown sugar, packed
1/2 cup unsweetened applesauce
2 ounces eggbeaters
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon cinnamon

Recipe Directions for Oatmeal Muffins

  1. Soak oats in milk for 1 hour (or hour for quick oats)

  2. Combine all ingredients in a large bowl

  3. Spoon into greased muffin pan

  4. Bake at 400F for 20-25 minutes
