Lighten them up by using light margarine, and leave out the chocolate chips and walnuts.

Recipe Ingredients for Oatmeal muffins

1/3 cup margarine
1/2 cup brown sugar
1 egg
1 cup buttermilk
1 cup whole wheat flour
1 cup oatmeal
1/2 tsp baking soda
1/2 tsp salt
1/2 cup walnuts
1/2 cup chocolate chips

Recipe Directions for Oatmeal muffins

  1. Beat margarine and brown sugar in mixing bowl. Mix in egg and buttermilk. Add flour, oats, baking soda and salt. Mix. Add walnuts and chocolate chips.

  2. Spoon into lined muffin tin and bake at 350 degrees for about 15 minutes until toothpick comes out clean.
