Oatmeal muffins using oatmeal processed into flour in food processor rather then flour.

Recipe Ingredients for Oatmeal Muffins (No Flour at All!)

2 1/4 cups oatmeal (processed into flour)
1/4 cup chopped almonds
1/4 cup raisins
2 teaspoons baking powder
1/2 teaspoon salt (optional)
3/4 cup milk
2/3 cup pure maple syrup
1/2 cup egg beaters
2 tablespoons vegetable oil

Recipe Directions for Oatmeal Muffins (No Flour at All!)

  1. Pre-heat oven at 450F.

  2. Cover 12 muffin bowls with oven-safe paper.

  3. On a big bowl, mix oatmeal, nuts, raisins, baking powder and salt (if used).

  4. Add the rest of the ingredients and mix til you have an even mix.

  5. Put the mix on the muffin bowls and fill 3/4 of each one.

  6. Bake for 13-15 min or til golden.
