Recipe Ingredients for Oatmeal Muffin

3/4 cup oats
23 1/2 g oat bran (1/4 cup)
4 T flaxseed meal
1 1/4 cup fat free soymilk
1 T vinegar
1/2 cup brown sugar
1 egg, slightly beaten
3/4 cup whole wheat flour
1/2 cup all purpose flour
23 1/2 g oat bran (1/4 cup)
1 carrot
1 tsp baking powder
1 tsp baking soda
1 tsp salt
1/2 tsp ground cinnamon
1/4 tsp ground cloves
1/2 tsp ground allspice
1/4 cup vegetable oil
1/4 cup raisins

Recipe Directions for Oatmeal Muffin

  1. Combine oats, bran and buttermilk ( or soymilk and vinegar) and flaxmeal; let stand 30 minutes. Add brown sugar and egg; mix well.

  2. Combine dry ingredients; stir into oat mixture.

  3. Stir in oil, grated lemon rind, lemon juice, raisins, and carrots.

  4. Spoon into greased or lined (sprayed too), filling 1/2 full; use small tins or regular tins.

  5. Bake at 375 for 12 to 15 minutes if small tins and 20 minutes if larger tins.

  6. Wrap and freeze leftovers.
