I borrowed this recipe from walters_glance and added some fruit and nuts that I had on hand.

Recipe Ingredients for Oatmeal to Go with Fruit and Nuts

1/2 cup honey
8 oz. sugar & fat free vanilla yogurt
2 egg whites
2 t vanilla
2 t baking soda
1 t cinnamon
1/8 t cloves
1/4 t nutmeg
1/4 t ginger
1/4 t allspice
6 cups rolled oats
1 T flax seeds
1/2 cup dried apples , chopped
1/4 cup walnuts, chopped
1 1/2 oz. raisins, chopped

Recipe Directions for Oatmeal to Go with Fruit and Nuts

  1. Pre-heat the oven to 325.

  2. Grind 3 cups of the oats to yield 1 1/2 cups of flour. They process well in a mini-chopper.

  3. Mix all wet ingredients and fold in dry. Spread into a greased (non-stick spray) 9x13 pan.

  4. Bake at 325 for about 30 minutes, or until golden.

  5. Cut into 12 squares. Stores best when wrapped well in plastic and stored in the freezer. A quick zap in the microwave or round in the toaster oven makes it a quick meal when rushing out the door in the morning.
