Delicious and hearty breakfast or lunch. Use organic rolled oats for a good chew and more fiber. Raisins can be replaced with any dried fruit; cherries are particularly good. Good with just a little bit of sweetener.

Recipe Ingredients for Oatmeal with Fruits and Nuts

1 cup rolled oats, dry
1 3/4 cups water
1/8 cup raisins
1/4 cup walnuts, organic raw
1 dash salt
1/2 cup soy milk

Recipe Directions for Oatmeal with Fruits and Nuts

  1. Bring water to a boil.

  2. Add salt.

  3. Add rolled oats and dried fruit, reducing heat so that pot simmers for 15 minutes.

  4. Allow to steam for a few minutes with lid on and heat off after cooking is done.

  5. Add walnuts directly to serving along with soy milk and noncaloric sweetener such as stevia or Splenda.
