A little healthier than many standard muffins. This large recipe makes 18 muffins - put extras in freezer bags and freeze. Feel free to substitute different types of nuts or dried fruit.

Recipe Ingredients for Oatmeal fruit and nut muffins

2 cups all purpose flour
1 cup Splenda no calorie
1 teaspoon baking powder
2 teaspoon baking soda
1/2 teaspoon salt
2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon ground ginger
1 cups rolled oats
1/2 cup light brown sugar
1/2 cup chopped walnuts
1/2 cup raisins
1/2 cup dried cranberries
1/4 cup chopped candied ginger
1/2 cup canola oil
3 large eggs
2 cups buttermilk

Recipe Directions for Oatmeal fruit and nut muffins

  1. Pre-heat oven to 375 deg. F.

  2. Grease or spray with non-stick spray muffin pans for 18 muffins, set aside. If you cannot fit all the muffin pans on the center oven rack, then move racks to the top and bottom third of the oven.

  3. Sift together the first 8 ingredients (From the all-purpose flour to the ground ginger.) Then stir the next 6 ingredients (From the rolled oats to the candied ginger.)

  4. In a separate bowl, whisk together the eggs, oil, and milk.

  5. Add the wet ingredients to the dry. Stir until just combined. Add batter to prepared muffin tins ? they?ll almost be filled to the top. Bake for about 18 minutes, rotating pans halfway through baking time. (If baking on 2 racks, be sure to also rotate from top to bottom.)

  6. Let muffin pans cool on for 5 minutes, then remove muffins to cooling rack.
