Healthy oatmeal cookie with currants or raisins. 1/2 cup of Fibre 1.

Recipe Ingredients for Oatmeal Fiber Cookie

2/3 cup unsweetened applesauce
12 packets Splenda
1 egg white
1/2 tsp vanilla extract
1/4 cup whole wheat flour
1/2 teaspoon baking soda
1 cup quick oats
32 g Fiber One
1/2 tsp nutmeg
1/2 tsp cinnamon
1/4 cup currants

Recipe Directions for Oatmeal Fiber Cookie

  1. Preheat the oven to 375 degrees fahrenheit.

  2. In a large bowl, blend together the apple sauce and Splenda. Beat in the egg white, then stir in the vanilla.

  3. In a separate bowl, combine the flour, spices and baking soda. Stir into the sugar mixture.

  4. Mix in the quick oats and Fibre 1, add currants.

  5. Drop dough by teaspoonfuls onto parchment paper lined cookie sheets.

  6. Bake for 8 to 10 minutes. Allow cookies to cool on baking sheet for 1 minutes before removing to a wire rack to cool completely.
