Recipe Ingredients for Oatmeal Date Muffins

1 1/2 cup oatmeal
1 cup skim milk
3/4 cup whole wheat flour
2 teaspoons baking powder
1/2 teaspoon baking soda
2 teaspoons cinnamon
14 dates, finely chopped
1 egg, beaten
4 tablespoons grapeseed oil
2 tablespoons agave syrup
1/2 cup prune baby food

Recipe Directions for Oatmeal Date Muffins

  1. Preheat oven to 400 degrees.

  2. Combine oatmeal and milk in a small bowl, set aside.

  3. In a separate bowl mix flour,baking powder, baking soda, cinnamon, and dates.

  4. In another bowl combine egg, oil, agave, prune baby food, and oatmeal mixture. Add to flour mixture and stir just till flour is moist.

  5. Spoon batter into muffin tins sprayed with nonstick spray. Bake for 20 minutes. Cool on wirk rack.
