Not too sweet and delicious! This is a Martha Stewart recipe, not my own but I added cinnamon and nutmeg to mine and substituted half the oil for applesauce.

Recipe Ingredients for Oatmeal and Cranberry cookies

1/2 cup whole wheat flour
1/2 cup white flour
1 tsp baking powder
1/4 tsp salt
1/4 cup canola oil
1/4 cup applesauce
2 egg whites
1 tsp vanilla extract
2/3 cup brown sugar
1/2 cup oatmeal
1/2 cup dried cranberries
1 tsp cinnamon
1 dash nutmeg

Recipe Directions for Oatmeal and Cranberry cookies

  1. Mix flour, cinnamon, nutmeg, baking powder and salt. Set aside.

  2. In another bowl, mix sugar, oil, applesauce, vanilla and the egg.

  3. Combine both bowls and mix.

  4. Add cranberries and oats.

  5. Drop by full tablespoons onto parchment lined cookie sheet.

  6. Bake @ 400 degrees for 15 minutes.

  7. Makes about 20 cookies.
