Oatmeal cookie made with ground toasted oats for flour. From Alton Brown's web site but with Craisins instead of raisins.

Recipe Ingredients for Oatmeal Craisin cookies

16 oz Old Fashioned Quaker Oats
10 oz Unsalted Butter
1 tsp Baking Powder
1 tsp Cinnamon, Ground
0.13 tsp Salt
6 oz Pure Cane Sugar
3 oz Pure Cane Sugar
1 large Egg, Whole
1 tsp Vanilla Extract, Imitation, No Alcohol
4 oz Craisins, Sweetened Dried Cranberries

Recipe Directions for Oatmeal Craisin cookies

  1. Toast oatmeal in 375 degree oven until lightly toasted; about 20 minutes.

  2. grind 8 oz into flour in food processor.

  3. Add baking powder, cinnamon and salt and pulse until mixed.

  4. Cream butter and sugar in mixed until light and fluffy. Add egg and vanilla extract.

  5. slowly stir in flour mixture.

  6. Then stir in by hand remaining toasted oats and craisins.

  7. Scoop onto cookie sheet lined with parchment paper. Place dough 2" apart.

  8. Bake for 12-14 minutes until slightly brown around the edges.

  9. Cool on pan for 2 minutes before moving to rack to cool completely.
