A variation of regular cornbread.

Recipe Ingredients for Oatmeal Cornbread

1 1/2 cups cornmeal
3/4 cups oatmeal (quick cook)
1/2 cup flour (either wheat or enriched)
1/2 cup sugar
1 cup milk (soy or regular)
2 eggs
2 tbs. oil
1 tsp. vanilla (optional)
1/2 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. salt

Recipe Directions for Oatmeal Cornbread

  1. Cooking Directions: Heat oven to 425 degrees. Cook in greased 9X13 inch pan for 20 minutes or until golden brown and you can put a toothpick in the middle and it comes out clean for best results.

  2. Suggestions:

  3. -If you want this to be gluten free, substitute oatmeal for the flour & omit the baking soda & powder.

  4. - You can also make this lower in fat by using a nonfat milk product and substituting milk for the oil.
