Reduced Fat, Reduced Sugar Oatmeal Cookies

Recipe Ingredients for Oatmeal Cookies

1 cup spelt flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tsp ground cinnamon
2 tbsp margarine
1 cup applesauce
1 large egg
2 egg whites
2 tsp vanilla extract
1/2 cup Splenda
1/4 cup SPLENDA Brown Sugar Blend
2 cups quick cooking oats
1/2 cup raisins

Recipe Directions for Oatmeal Cookies

Preheat oven to 375. Line a cookie sheet with parchment paper. In a medium bowl whisk together flour, baking soda, baking powder, salt, and cinnamon. In a large bowl, cream together the sugar and sugar substitutes. Beat in the egg, followed by the applesauce and vanilla extract. Stir in oats and raisins. Working by hand, stir in flour mixture until no streaks remain. Drop tablespoonfuls unto the baking sheet. Bake for 12 minutes at 375F. Cookies will be light brown on the edges. Let cool on sheet for 3-4 minutes, then remove and allow to cool.
