Recipe adapted from "Honey Currant Oatmeal Cookies" from the "All American Cookie Book", p. 281.

Recipe Ingredients for Oatmeal Cookies

1/2 cup whole wheat flour
3/4 cup white flour
3/4 tsp baking soda
1/2 tsp cinnamon
1/4 tsp salt
1 cup unsalted butter, slightly softened
3/4 cup sugar
1/4 cup honey
2 1/2 tsp vanilla
2 1/3 cups oats

Recipe Directions for Oatmeal Cookies

  1. Preheat overn to 350 degrees F. Grease baking sheets.

  2. In medium sized bowl, mix together dry ingredients.

  3. In large bowl, beat together butter and sugar until lightened and fluffy, about 1 minute.

  4. Add honey and vanilla and beat until well blended.

  5. Beat in the flour mixture until evenly incorporated.

  6. Let the dough stand for 5 mintues, or until firmed up slightly.

  7. Shape portions of the dough into 1 2/2 inch balls with lightly greased hands. Press flat.

  8. Bake sheets, one at a time for 9 minutes or until lightly browned and almost firm when pressed in the centers.

  9. Transfer sheet to wire rack and let stand until the cookies firm up slightly, about 2 minutes.

  10. Using a spatula, transfer the cookies to wire racks. Let stand until completely cooled.

  11. Store in an airtight container for up to 2 weeks or freeze for up to 1 month.
