Adapted from Alicia Silverstone's "The Kind Diet." Serving size = 2 cookies

Recipe Ingredients for Oatmeal Cookies

1 cup quick-cooking rolled oats
3/4 cup whole wheat flour
1/4 cup honey
2 tsp. baking powder
1 tsp. baking soda
1/4 tsp. sea salt
1/3 cup maple syrup
1/2 cup canola oil
1 tsp. vanilla extract
1/2 tsp. molasses
1/4 cup raisins
1/4 cup walnuts, finely chopped
1/4 cup flax seeds
1 tsp. cinnamon

Recipe Directions for Oatmeal Cookies

  1. Preheat oven to 350 degrees. Line a baking sheet with parchment.

  2. Combine dry ingredients in a large bowl. In a separate bowl, combine the liquid ingredients. Add wet ingredients to dry ingredients; stir to combine. Fold in nuts & raisins.

  3. Roll tablespoon-size scoops of dough into balls with your hands. Place balls onto prepared bakign sheet & press down slightly on balls to flatten tops. Bake 8-12 minutes or until lightly browned. Cool on a baking rack.

  4. Flour may be replaced with barley flour, spelt flour, gluten-free baking mix (w/o baking soda & baking powder).
