Can add 3/4 cup cranberries and/or 1/2 cup of chocolate chips for different versions.

Recipe Ingredients for Oatmeal Cookies

2 cups rolled oats
1/2 cup whole wheat flour
3/4 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
0.16 cup brown sugar (NOTE: Use 1/2 cup Splenda Brown Sugar blend)
1/3 cup light margarine, melted
3 egg whites
2 teaspoons vanilla

Recipe Directions for Oatmeal Cookies

  1. Preheat the oven to 350. Coat 2 large baking sheets with cooking spray.

  2. In a large bowl, combine the oats, flour, baking soda, cinnamon, and salt.

  3. In a medium bowl, whisk the brown sugar, margarine, egg whites, and vanilla extract until smooth. (Stir in cranberries and chocolate chips if desired). Add to the flour mixture; stir just until blended.

  4. Drop the batter by scant tablespoons onto the prepared baking sheets.

  5. Bake for 10 minutes, or until the cookies are golden brown.

  6. Cool the cookies on racks. Store in an airtight container.
