kinda high in fat and cals, but also high in fiber and protein for cookies! I ran out of applesauce and milk so I subbed some olive oil and smart balance margarine. I added cranberries instead of raisins and added some honey--less for sweetness than for stickiness. and I put in some coconut. I think next time I will use pb instead of any oil or margarine or milk. these are a bit too sweet so less sugar next time too.

Recipe Ingredients for oatmeal cookies

1 cup oats
1/4 cup craisins
1 1/2 tbsp sugar
1 tbsp honey
1/8 cup applesauce
1/8 cup olive oil
2 tbsp margarine
1/8 cup coconut
1 tsp vanilla extract
2 tsp cinnamon
1 banana

Recipe Directions for oatmeal cookies

  1. mix the banana, applesauce and fats together.

  2. add honey, sugar, vanilla and cinnamon.

  3. then add oatmeal and your tasty choices (here coconut and craisins). you could also add carob chips, choco chips, butterscotch chips, raisins, dried blueberries, apples in tiny pieces, probably lots of things--nuts...

  4. bake at 350 for about ten minutes. these don't spread at all so kinda mush them into a cookie shape before you bake. you can pack them into the cookie sheet almost touching too.
