This is a healthy oatmeal cookie with low sugar. You can add 1/2 cup of raisins and/or 1/2 cup of walnuts if you wish. Also you may substitute the olive oil with applesauce.

Recipe Ingredients for Oatmeal Cookies

1 cup whole wheat flour
1 1/2 cups Oats
1/2 tsp baking soda
1/4 tsp baking powder
1/2 tsp salt
3 tbsp Cinnamon
1/2 cup brown sugar
1/2 cup olive oil
1 Egg, Whole
1 tsp Vanilla

Recipe Directions for Oatmeal Cookies

  1. In a large bowl mix the dry ingredients together.

  2. Beat the egg with a bit of water. In a medium bowl mix the wet ingredients and add beaten egg.

  3. Pour the wet ingredients into the dry ingredients and mix together.

  4. Cool mixture in refrigerator for 20 minutes.

  5. Preheat oven to 335 degrees (F).

  6. Line a baking sheet with parchment paper. Drop spoonfuls onto parchment paper and press down to spread out.

  7. Bake for 15 to 20 minutes until golden brown.
