I have a hard time eating enough protein to balance my day. These came out pretty good for a protein punch.

Recipe Ingredients for Oatmeal Cookies with Added Protein

0.67 cup Apple Sauce, no added Sugar
12 tsp Sweetener, Splenda
12 tsp Domino Light Brown Sugar
1/5 cup AllWhites
1/2 tsp Vanilla Extract[2050
1/2 tsp Leavening Agents, Baking Soda
1 1/4 cup Breakfast Cereal, Quick Oats
1 serving MLO Milk and Egg Protein Powder
1/2 tsp Cinnamon
1/4 cup All Purpose Flour

Recipe Directions for Oatmeal Cookies with Added Protein

  1. Preheat oven to 375F.

  2. Combine applesauce, Splenda (or other granular sugar substitute), & brown sugar.

  3. Add egg white. Mix.

  4. Add vanilla extract. Mix.

  5. Add Protein powder. Mix well.

  6. In Separate bowl, combine flour, baking soda, and cinnamon. Stir to combine. Add quick oats and stir.

  7. Slowly add dry ingredients to applesauce mixture.

  8. Stir in 1/4 raisins, if desired. (Not included in calorie count.

  9. Spray cookie sheets with canola oil spray.

  10. Place by slightly rounded teaspoonfuls on cookie sheets, about 1 inch apart.

  11. Bake for about 8 minutes, until golden around edges.

  12. Let cookies rest on pan for 5 minutes before removing to cool completely on plate or wire rack.

  13. Note: these are small 2-3 bite cookies (1 bite for my husband).
