Recipe Ingredients for Oatmeal Cookie-Candy Bar

2 cups rolled oats
1 cup all-purpose flour
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup peanut butter
4 tbsp butter, cut into pieces
1/3 cup sugar
2/3 cup light brown sugar, packed
2 large eggs
1 tablespoon vanilla extract
1 cup bittersweet chocolate chips, divided
1/4 cup peanuts, crushed

Recipe Directions for Oatmeal Cookie-Candy Bar

  1. Combine oats, flour, cinnamon, baking soda and salt in a medium bowl. Set aside

  2. Mix together peanut butter, butter and sugars until smooth (will still be grainy).

  3. Add in the eggs, one at a time. Add in the vanilla.

  4. Add dry to wet, then mix in 1/2 cup chocolate chips and the peanuts.

  5. Pour into an 8x8 square baking pan and bake at 350degrees for 25-30minutes, until edges are golden brown and center is set.

  6. Remove from oven, and while still warm sprinkle reserved chocolate chips over-top of the baked bar/cake/thing. Let the chocolate chips get warm and gooey (approximately 3 minutes) and then spread the melted chocolate chips to evenly cover the bar/cake/thing.

  7. Let cool for 1 hour, place in refrigerator for at least 30minutes. Slice into 16 pieces, and serve.
