Recipe Ingredients for Oatmeal Cinnamon Raisin Bread

229 g buckwheat flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1 1/2 tsp cinnamon
109 g quick oats
70 g turbinado sugar
141 g raisins
449 g unsweetened applesauce
135 g egg whites
60 g skim milk

Recipe Directions for Oatmeal Cinnamon Raisin Bread

  1. Preheat oven to 350 degrees Fahrenheit, prepare loaf pan.

  2. Soak raisins in warm water for about 5 minutes until tender. Discard water afterwords.

  3. In a large bowl, mix dry ingredients together.

  4. In separate bowl, mix together wet ingredients including sugar. Allow turbinado sugar to dissolve, about 5 minutes.

  5. Add wet ingredients to dry, stir until just combined.

  6. Fold in raisins.

  7. Place into pan and bake for 55 to 60 minutes. Test to determine if done by using toothpick.

  8. Remove from pan immediately and cool on a wire rack.
