I got this recipe out of a light cooking book and modified it so that it would be even healthier. I also added in about 3 tbsp benefiber to add fiber to the mix. These came out absolutely delicious.

Recipe Ingredients for Oatmeal Chocolate Chip Cookies

1/2 cup butter, brummel yogurt based
3/4 cup sugar, granulated
3/4 cup brown sugar
1/3 cup egg white
1 tsp vanilla extract
1 1/4 cups all purpose flour, wheat
1 tsp baking soda
1/2 tsp ground cinnamon
1/2 tsp salt
2 3/4 cup rolled oats
2 cups chocolate chips
1 cup raisins
1/4 cup flax, meal

Recipe Directions for Oatmeal Chocolate Chip Cookies

  1. heat oven to 375 F

  2. in large bowl, beat vegetable oil spread, granulated sugar and brown sugar with mixer or manual until mixed well.

  3. add eggs and vanilla; beat until creamy.

  4. stir together flour, baking soda, cinnamon and salt; gradually add to sugar mixture, mixing well.

  5. stir in oats, chips and raisins.

  6. drop by teaspoons onto ungreased cookie sheet

  7. bake 8 to 10 mins or until golden brown.

  8. cool slight; remove from cookie sheet to wire rack. cool completely

  9. makes 4 dozen cookies
