Recipe Ingredients for Oatmeal Choc chip AVOCADO cookies

1 cup avocado
1/2 cup brown sugar
1/4 cup sugar
1 egg
1 teaspoon vanilla
1 cup plain flour (or whole wheat pastry flour)
1 tsp baking soda
1/2 tsp salt
2 cups rolled oats
6 oz chocolate chips

Recipe Directions for Oatmeal Choc chip AVOCADO cookies

  1. Heat the oven to 375 F. , Combine sugars Gently with the avocado until blended.

  2. 2. Add the egg and vanilla extract and mix thoroughly.

  3. 3. Sift the flour, baking soda and salt into the butter mixture and mix well. Stir in the oats and coconut. Fold through the chocolate chips and walnuts (if using).

  4. 4. Drop into tablespoonful-sized balls onto a baking sheet and bake for 10-15 minutes, or until lightly golden and crispy.
