Recipe Ingredients for oatmeal carrot muffin

2 cups whole wheat flour
1 cup oatmeal
1 tbsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 cup brown sugar
1 tsp cinnamon
1/2 tsp nutmeg
3 egg whites
1/4 cup oil
1/2 cup applesauce
1 1/2 cups yogurt
1 tsp vanilla
1 cup grated carrot
2 tablespoon flax seed

Recipe Directions for oatmeal carrot muffin

  1. Preheat oven to 350.

  2. Mix together flour, oatmeal, baking powder, baking soda, salt, brown sugar, cinnamon and nutmeg.

  3. Mix eggs, oil, yogurt and vanilla in a large mixing bowl. Stir in Carrots and then dry ingredients.

  4. Spoon into 6 large of 12 regular sized muffin cup and bake for 30 minutes.
