Delicious healthier version of old recipe.

Recipe Ingredients for Oatmeal Cake

1 1/4 c. boiling water
1 c. oats
1 stick butter
1 c. splenda
1 c. splenda brown sugar blend
2 eggs
1 1/2 c. whole wheat flour
1 t. cinnamon
1 t. salt
1 t. baking soda

Topping:
2 T. butter
1/4 c. splenda brown sugar blend
1/2 c. coconut
1/2 c. nuts

Recipe Directions for Oatmeal Cake

  1. Mix together first 3 items, cover and let stand for 20 minutes.

  2. Add the next 7 ingredients to the mixture.

  3. Bake at 350 degrees F. for 35 minutes.

  4. Mix topping ingredients and pour over cake while hot.

  5. Place in oven for 2 minutes or until coconut is brown.
