Good oatmeal cookies with applesauce, nuts and dried fruit.Have a couple with yogourt for a more complete meal or snack.

Recipe Ingredients for Oatmeal Breakfast Cookies

1 cup wholewheat flour
1 tsp baking soda
3/4 tsp salt
1/2 tsp. allspice
2 tsp. cinnamon
2 tsp. ginger
2 eggs
1/3 cup vegetable oil
1 1/4 cups unsweetened applesauce
3/4 cup brown sugar
1 tbsp grated orange rind
1 tsp vanilla
3 cups porridge oats
3/4 cup chopped almonds
1/2 cup sunflower seeds
1 cup dried cranberries

Recipe Directions for Oatmeal Breakfast Cookies

  1. Preheat oven to 350F (180C).

  2. Combine ww flour, baking soda, salt, and spices, Stir well and set aside.

  3. Place eggs, oil, applesauce, and brown sugar in a large bowl and beat together. Add orange rind, vanilla, oats, almonds, and sunflower seeds, and stir until well combined. Add flour mixture and stir well. Add dried cranberries, and stir until well distributed.

  4. Drop spoonfuls of cookie dough on prepared cookie sheet and press down with a large fork. Bake for 15-20 minutes or until lightly browned. Let cool on cookie sheet before removing.
