I make these ahead of time when I am signed up for an early morning class. It's a quick, easy healthy breakfast that I can eat in the car.

Recipe Ingredients for Oatmeal Breakfast Cookie

1/8 cup canola oil
1/2 cup unsweetened applesauce
1/2 cup brown sugar
3 egg whites
2 teaspoons vanilla
1/2 teaspoon baking soda
1 1/2 cup flour
3 cups oats
1/2 cup raisins

Recipe Directions for Oatmeal Breakfast Cookie

  1. Preheat oven to 350

  2. Oil a 9x13 baking pan

  3. blend oil, sugar and applesauce

  4. add egg whites, vanilla and baking soda

  5. fold in the flour then the oats

  6. Mix in the raisins

  7. Bake for about 15 minutes

  8. Let cool

  9. Cut into 12 pieces
