Homemade Oatmeal Bread - Recipe from "Breads Like Mother Used to Make" with substitutions

Recipe Ingredients for Oatmeal Bread

1 cup whole milk
1 cup skim milk
4 cups wheat flour
1 cup white flour
1/4 cup brown sugar
1 tablespoon salt
7 grams yeast
2 tablespoons butter
1/2 cup water
2 cups rolled oats

Recipe Directions for Oatmeal Bread

  1. Scald milk; stir in 2 c. rolled oats, brown sugar, salt and butter. Remove from heat and cool to lukewarm.

  2. Sprinkle yeast on warm water; stir to dissolve

  3. Add milk mixture and 2 c. flour to yeast. Beat with electric mixer on medium speed, scraping the bowl occasionally, 2 minutes. Or beat with spoon unitl batter is smooth.

  4. Add enough remaining flour, a little at a time, first iwth sppon adn then with hands, to make a soft dough that leaves sides of bowl. Turn onto floured board; knead until dough is morht and eleastic (8 - 10 minutes). Place in lightly greased bowl;p turn dough over to grease top. Cover and let rise in warm place until doubled; 1 - 1 1/2 hours. Punch down and let rise agian until nearly doubled, about 30 minutes.

  5. Turn onto board and divide in half. Round up to make 2 balls. Cover and let rest 10 minutes. Shape into loves and place in greased loaf pans. Let rise until almost doubled, about 1 hour and 15 minutes. Brush tops of loaves iwth egg white beaten with watner and wprkle with rolled oats.

  6. Bake in moderate oven (375) about 40 minutes. (If bread starts to brown too much after 15 minutes cover with aluminum foil).

  7. Makes 2 loaves.
