Hearty superfood breakfast. I like to add milled flaxseed, too to add a boost of omega-3s (not included in analysis).

Recipe Ingredients for Oatmeal Blueberry Muffins

1 c Old Fashioned Oats
240 g ( g) Vanilla Almond Milk
1 c whole wheat flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2 egg whites
1/2 c unsweetened apple sauce
1/2 c brown sugar
1 c blueberries
1/4 c chopped walnuts

Recipe Directions for Oatmeal Blueberry Muffins

  1. Mix together almond milk and oats. Let soak in refrigerator for 1 hour.

  2. Mix dry ingredients together. Combine wet ingredients with the oat and milk mixture. Gradually add to dry ingredients and stir gently. Be careful not to over-stir.

  3. Fold in walnuts and blueberries.

  4. Spoon batter into greased muffin tins.

  5. Bake at 400 for 20-25 min (close to 50 minutes if using a loaf pan).
