Recipe Ingredients for oatmeal blueberry muffins

1 2/3 cups rolled oats
1/2 cup flour
1/2 cup whole wheat flour
1/6 cup flax seed
1/2 cup brown sugar
2 teaspoons cinnamon
1 teaspoon baking powder
1 teaspoon baking soda
3/4 teaspoon salt
1 cup non fat milk
1/4 cup unsweetened apple sauce
2 eggs
2 cups blueberries
2 tablespoons oat flour
1 tablespoon sugar

Recipe Directions for oatmeal blueberry muffins

  1. mix dry

  2. mix wet

  3. add wet to dry

  4. combine blueberries and oat flour then fold into batter

  5. scoop into mini muffin trays

  6. sprinkle with sugar

  7. bake at 400 deg for 10 min
