Light oatmeal and bluberry muffins

Recipe Ingredients for Oatmeal Blueberry Muffins

1 cup quick oats
1 cup skim milk
1 cup flour
1/3 cup sugar
3 teaspoons baking powder
1 teaspoon sugar
1/2 teaspoon salt
1 egg, lightly beaten
1/4 cup canola oil
1 cup blueberries, (fresh or frozen-thawed)

Recipe Directions for Oatmeal Blueberry Muffins

  1. Mix together oats and milk and let rest 10 minutes (while you continue with recipe).

  2. Sift together next 5 ingredients.

  3. Stir egg and oil into oat mixture.

  4. Add dry ingredients and stir just until incorporated (don't over mix).

  5. Gently fold in blueberries.

  6. Bake in lightly oiled non-stick muffin tin in preheated 425 degree oven for 20-25 minutes (until golden brown).
