Recipe Ingredients for oatmeal blueberry mini muffins

1/2 c rolled oats
7/8 c All-purpose flour
1 tsp baking soda
1 egg white
1/2 large egg
1/4 c splenda brown sugar
1/4 c honey
1 1/2 tbsp vegetable oil
7/8 c boiling water

Recipe Directions for oatmeal blueberry mini muffins

  1. stir oats into boiling water, let cool

  2. combine cinnamon, nutmeg, flour, baking soda

  3. beat eggs, sugar, honey, oil til smooth

  4. add oats to eggs, beat til smooth

  5. add flour mixture until just mixed

  6. bake at 350 for 20ish minutes(toothpick clean)
