Recipe Ingredients for Oatmeal Blue-berry Apple Cake

1 cup white flour
1/2 cup oatmeal
1/3 cup sugar
2 tsp baking powder
1/4 tsp salt
1/2 cup soy milk
1 red apple
1 tbsp cornstarch
1 cup blueberries

Recipe Directions for Oatmeal Blue-berry Apple Cake

  1. Directions

  2. Preheat oven to 400 degrees F.

  3. In medium mixing bowl, combine flour, oats, vegan sugar, baking powder and salt.

  4. In another bowl, combine soy milk, applesauce and cornstarch. Pour this wet mixture into the dry mixture all at once. Stir until just moistened (batter will be lumpy).

  5. Fold in the blueberries( fresh or frozen) , spoon batter into a non-stick 8 x 8 baking pan.

  6. Bake 20 - 25 minutes, cool on rack 5 - 10 minutes, serve warm.
