Low Sugar, Low Cal Oatmeal muffins

Recipe Ingredients for Oatmeal Banana Nut Muffins

2 large Egg, Whole
16 oz Unsweetened Applesauce
5 cup dry Old Fashioned Quaker Oats
2.75 cup Special Request Skim Plus Milk
4 tbsp Flaxseed Meal
8 serving Natural Honey
2 tbsp Cinnamon, Ground
3 tsp Baking Powder
1 tsp Vanilla Extract
1 tsp Salt, Table
0.75 cup, sliced Almonds

Recipe Directions for Oatmeal Banana Nut Muffins

  1. ■2 eggs

  2. ■2 cups applesauce, unsweetened

  3. ■5 cups, Old Fashioned rolled oats

  4. ■2 banana, mashed

  5. ■2 3/4 cups milk (I used 1%)

  6. ■1/4 cup flaxseed meal

  7. ■1/2 cup honey or agave nectar

  8. ■1 tablespoon ground cinnamon

  9. ■3 teaspoon baking powder

  10. ■1 teaspoon vanilla extract

  11. ■1 teaspoon salt

  12. ■ 3/7 cup sliced raw almonds

  13. Optional toppings: raisins, walnuts, chocolate chips

  14. 1. Preheat oven to 350 degrees.

  15. 2.Mix eggs, vanilla, applesauce, banana and Stevia together in a bowl.

  16. 3.Add in oats, salt, baking powder, flax and cinnamon and mix well with wet ingredients.

  17. 4.Finally pour in milk and combine.

  18. 5.Spray a 12 and 6 capacity muffin tin with cooking spray or use cupcake liners.

  19. Pour mixture evenly into muffin tin cups.

  20. 6.If using toppings add them onto the tops of muffins now. If using fresh or frozen fruit, drop it right into the batter.

  21. 7.Bake 30 minutes until a toothpick in center comes out clean. Cool and enjoy or freeze them in gallon freezer bags.
