Oatmeal Banana Muffins Recipe

Tastes great with a little butter spread on, hot from the oven! You might want to add 1/4 tsp salt. I was trying to go heart healthy. Whole wheat flour would be excellent, instead of the white flour, too. If you don't have honey, you could use brown sugar, or use part honey, part molasses. If you use plain yogurt, add 1/4 cup more honey. I bet banana yogurt would be rad in these, too! :-D

Recipe Ingredients for Oatmeal Banana Muffins

1/2 cup canola oil
2 eggs
1 cup bananas, mashed
1/4 cup honey
1/4 cup vanilla yogurt
1 tsp baking soda
1 1/2 cups white flour
1 cup rolled oats
1 cup walnuts
1 tsp cinnamon
1/4 tsp allspice

Recipe Directions for Oatmeal Banana Muffins

  1. Heat oven to 375 degrees F.

  2. Prep muffin tin with cupcake liners. Spray with cooking spray.

  3. Mix the wet ingredients until smooth.

  4. Add in dry ingredients (including nuts) and mix until incorporated.

  5. Fill muffin cups about 2/3ish full. Basically, just distribute the batter evenly between the 12 muffins.

  6. Add a little more oats to the tops, if you want, for garnish.

  7. Bake for about 18-22 minutes, until a toothpick comes out clean and the tops look pretty and golden.

  8. Take them out of the tin and place on a plate/wire rack to cool.

  9. Enjoy!
