Recipe Ingredients for Oatmeal Banana Bread by Paula Conway

1 1/2 cups flour
0.67 cups sugar
1 1/2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
3/4 cup dry oatmeal
1 cup banana
1/2 cup soy milk
1/4 cup walnut oil
1 teaspoon vanilla extract
2 eggs

Recipe Directions for Oatmeal Banana Bread by Paula Conway

  1. Preheat oven to 350F.

  2. Spray an 8″ 4″ loaf pan with the light cooking spray.

  3. Mix all dry ingredients in a large bowl.

  4. Mix the mashed banana, soy milk, oil, vanilla, and eggs in a small bowl.

  5. Blend the wet ingredients in with the dry ingredients.

  6. Spoon batter into the prepared pan and bake for 50 minutes or until light golden brown on top.

  7. Cool on a wire rack for 20 minutes.

  8. Remove the bread from the pan and cool thoroughly on the rack before serving.
