Recipe Ingredients for oatmeal apricot nut cookies

1/4 c margarine
2 1/2 tbs splenda
2 egg whites
3/4 c unsweetened applesauce
1/2 tbs brown sugar
1 tsp vanilla extract
1 cup flour
1 tsp baking soda
1 tsp ground cinnamon
1 1/2 c rolled oats
1/2 c chopped dried apricots
1/8 c chopped peanuts
1/8 c chopped almonds
1/8 c chopped cashews

Recipe Directions for oatmeal apricot nut cookies

  1. preheat oven to 350 degrees. grease cookie sheet with baking spray.

  2. in a large bowl, cream together margarine, Splenda and brown sugar and egg whites until smooth. Stir in applesauce and vanilla.

  3. combine flour, baking soda, and cinnamon. Stir into the applesauce mixture. Add the oatmeal, chopped apricots and chopped mixed nuts. Drop by rounded spoonfuls onto the prepared cookie sheets. Press slightly to spread out.

  4. Bake 15 to 17 minutes in preheated oven. Cool 1 minute on cooke sheets than remove to wire rack to cool completely. Store in an airtight container.
