These cookies are not too sweet, much lower in fat and higher in fiber than most cookies.

Recipe Ingredients for Oatmeal Apricot Cookies

1/3 cup margarine
1 cup packed brown sugar
1 egg
1/2 cup 2% milk
1 tsp. vanilla
1 cup whole wheat flour
1 tsp baking powder
1/2 tsp. baking soda
1/2 tsp. cinnamon
1 1/4 cup rolled oats
1/4 cup wheat germ
1 cup chopped dried apricots or raisins

Recipe Directions for Oatmeal Apricot Cookies

  1. In large mixing bowl, combine margarine, sugar and egg; beat well. Beat in milk and vanilla. Add flour, baking powder, baking soda, cinnamon, rolled oats, wheat germ and apricots; mix well.

  2. Drop batter a small spoonful at a time onto nonstick baking sheets. Bake in 375 F. oven for 12-15 minutes or until golden. Makes about 40 cookies.
