Muffins hearty enough for breakfast or a substantial snack. There is no oil (fat) in the recipe. The recipe uses unsweetened applesauce instead of oil. In this recipe, lemon zest replaces 1/2 tsp salt. Less may be used. The spices may be varied. I usually leave out the hot pepper and cardamom.

Recipe Ingredients for Oatmeal Applesauce Buttermilk Muffins with Lemon Zest no.1

1 cup Milk, Buttermilk, Fluid, Cultured, Lowfat
1 cup Wheat Flour, White, All-purpose, Enriched, Bleached
1 tsp. Leavening Agents, Baking Powder, Low-sodium
1 tsp. Leavening Agents, Baking Soda
1 cup Applesauce
1 large Egg, Whole
1 tsp Vanilla Extract
1 tsp. Cinnamon, Ground
1 tsp. Nutmeg, Ground
1 tsp Cloves, Ground

Recipe Directions for Oatmeal Applesauce Buttermilk Muffins with Lemon Zest no.1

  1. Directions:

  2. Place Oats in a small bowl, pour in buttermilk and let sit at room temperature for 2 hours.

  3. Preheat oven to 375 degrees F. (190 degrees C.).

  4. Grease (spray with non-stick spray) 12 muffin cups or line with paper muffin liners.

  5. In a large bowl, stir together whole wheat flour and baking powder.

  6. Stir the spices into the dry mixture. (Use more or less, to your taste. Cinnamon's the most important flavor; the others are "supportive".) Mix well.

  7. Stir together the egg, honey, applesauce, and grated lemon zest in a small bowl; mix together, then add this to the oat/buttermilk mixture, stirring to mix.

  8. Finally, add "dry" ingredients to the "wet" ingredients and stir together, mixing well.

  9. Pour batter into prepared muffin cups and bake in preheated oven for 30 minutes, until a toothpick inserted into the center of a muffin comes out clean.

  10. This recipe makes 12 muffins.

  11. About 104-105 calories per muffin. (If readout shows less than that, it's wrong!)
