Recipe Ingredients for Oatmeal Applesauce Breakfast Muffins

1 1/2 cups water
1 cup Old fashioned oats
1 tsp salt
1 cup dark raisins
1 cup light brown sugar
1/4 cup vegetable oil
1 cup unsweetened applesauce
2 eggs
1 tsp vanilla
1 1/2 cups flour
1 tsp baking soda
1 tsp cinnamon
1/2 tsp nutmeg

Recipe Directions for Oatmeal Applesauce Breakfast Muffins

  1. Bring water to a boil

  2. stir in oats and return to a simmer and add raisins and salt. Cook for 4 to 5 minutes stirring occasionally.

  3. When the oats have softened and the water is absorbed. Turn off heat

  4. In a large mixing bowl mix together oil, applesauce and brown sugar.

  5. Stir in the oatmeal and let cool until just luke warm.

  6. Preheat oven to 350 degrees.

  7. Once mixture is cooled slightly, stir in eggs and vanilla.

  8. In a sifter combine flour, baking soda and spices. Sift into the oatmeal mixture

  9. stir until just moistened.

  10. Grease muffin tins with cooking spray or line with muffin papers.

  11. With a 2 oz ice cream scoop or a 1/4 cup measuring cup divide batter into the muffin tins.

  12. If desired, sprinkle with oats for decoration.

  13. Bake at 350 for 15 to 20 minutes until a toothpick comes out clean.

  14. cool 5 minutes in the muffin tin and remove to a cooling rack.

  15. Muffins will be extremely moist due to the cooked oatmeal.
