Recipe Ingredients for oatmeal apple prune muffins

1 cup oatmeal
1 cup soy milk
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/3 cup brown sugar
1/2 cup applesauce
1 egg
1/2 cup prunes, chopped
1/2 cup apple, chopped

Recipe Directions for oatmeal apple prune muffins

  1. Place oats in a small bowl, pour in milk. Let sit for 10-20 min at room temperature.

  2. Preheat oven to 375 degrees F (190 degrees C). Grease 10 muffin cups or line with paper muffin liners.

  3. In a large bowl, stir together flour, baking powder, baking soda and brown sugar. Stir in oat/milk mixture, applesauce and egg; mix well. Pour batter into prepared muffin cups.

  4. Bake in preheated oven for 30 minutes, until a toothpick inserted into center of muffin comes out clean.
